Cooking recipes for resistant cooks

 Hello everyone! 

My name is Zuzia and I am a student at the Nicolaus Copernicus University. I am currently 21 years old and I live by myself in ToruĊ„ since September. I have never been a good cook, but I really enjoy eating good food. When I first move here I had a huge problem with preparing meals, it took me a lot of time and the results were not satisfying. That is why I started to look for easy to prepare recipes perfect for busy students. Later I realised that it is not easy to make something good, healthy and quickly at the same time. I started to explore many interesting recipes in order to find something that really works. In this blog, I post my favourite recipes dedicated to students that as I am are not good cooks.

  I would like to present you two recipes, first one is very easy and good for every kind of meal. Second one is a little bit advanced, but still doable and suitable for untalented cooks like me:

1) TORTILLA PAN WRAP

First and probably my favourite recipe is perfect for breakfast, lunch and dinner. You will not need much to do this plus you can modificate it as much as you like based on your fridge compartment. I like to eat tortilla wraps before my lectures because they will keep me full for a long time and what is even more important, they are quick to make, so I will not waste a lot of time.  

You will need: 

1 tortilla wrap (you can buy it in every supermarket, it costs around 2$) 

Vegetables (I personally recommend tomato’s, baby spinach and paprika) 

Cheese  (My recommendation is the one in slices)

Ham/ chicken/ bacon (You can pick your favourite kind of meat, or if you a vegetarian, choose the option without any kind of meat)

One egg 

Seasons (as you like, but necessary salt) 

How to prepare it?

Break an egg into the glass or bowl and mix yolk with the rest of an egg. You can do this with fork or beater, then add seasoning. 

Hit the pan with olive oil on it. 

Pour the egg into the pan and leave it for 2 minutes. Cover the egg with the tortilla wrap and press it together. 

Wait a minute and turn the tortilla and the egg over. 

Reduce the burner power and put the slices of cheese, meat and vegetables on the omelette. 

Fold the two sides of the tortillas inward to form a pocket. 

Turn the whole thing over and turn it until both sides are golden brown put your meal on a plate and enjoy!

2) PAD THAI 

Pad Thai seams like a really complicated dish, but is does not have to be. On evenings when you want to eat pad Thai, try to do this 15-minute easier version instead. It is fast and easy enough for weekday evenings, but sophisticated enough for dinners with your parents. This one is a little bit advanced and require more complicated ingredients, but they are all very practical and worth to have in our kitchen.

You will need:

1 pack of rice noodles

2 tablespoons of peanut oil

Vegetables (most important is green onion, reast depends on you)

1 portion of pork

Half of the cup of chicken broth (you can buy instant version)

2 tablespoons of  soy sauceor vinegar

3 cups mustard

A cup chopped peanuts (whatever kind is your favourite)

How to prepare it?

Pour the water into a medium pot and make it boil. Put the noodles in a big bowl and cover with boiling water. Left it until soft, about 5-7 minutes.
 

Heat the oil in a large skillet. Add the green onions and other vegetables. Cook it for about 2 minutes. Add the pork and cook until it’s well browned.


Add the chicken broth, soy sauce. Cook it in medium heat until reduced slightly.

Add the mustard and toss until wilted. Add the rice noodles and toss it all together. Add peanuts and you can try it!

I know that cooking can be really stressful, to try to make this experience enjoyable for you. Try at first with things that you feel the most confident about, and then slowly try to improve your skills.
